What truffle peelings are and where they come from
A grower puts it in one line: what we are talking about is the trimmings. Every truffle that is cleaned, graded and sold whole leaves something behind.
The lowest grades still have their aroma and their flavour. They are not sold as whole pieces because they have no shape, not because they lack scent.
Three uses for low-grade black truffle
The grower names three destinations for the truffle that does not sell fresh and whole.
- Prepared products: sauces, butters, fillings and other elaborations where the truffle is blended in.
- Supermarket truffle products: much of what is sold in jars on the shelf is made from the lowest grade, meaning broken truffle.
- Aroma extraction: the last link in the chain, where the raw material is bagged, frozen and used for its scent.
Why buying peelings at origin makes sense
Around 90 per cent of Spain’s black truffle harvest leaves the country unprocessed, mostly for France, and the value of transformation is captured there.
For a processor, that means the raw material usually arrives through at least one intermediary. Buying trimmings from the growing region removes that step.
How trade orders for peelings are quoted
The price of black truffle depends on whether you are buying ten grams or a hundred kilos, and peelings are on the kilo end of that scale.

Peelings, pieces and frozen: which one to ask for
Peelings are trimmings with no shape. Pieces are broken truffles, still recognisable as truffle. Frozen is the format for whatever needs to keep past the season.

Are truffle peelings the same species as the whole truffle?
Yes. They are trimmings of Tuber melanosporum, the same black truffle sold whole by grade. What differs is shape, not species or aroma.
Can peelings be supplied outside the winter season?
Trimmings are produced while whole truffle is being cleaned, from December to April. For supply outside those months, ask about the frozen format.
